Here is a mango cake recipe I created, if you like mango you will love this 🙂 A mango mousse cake with a mango centre and a mango glaze 🙀
- 1 Mango
Coconut Cake Base:
- 2 tsp hot water
- 40g coconut desiccated
- 80g caster sugar
- 100g self-raising flour
- 1 tsp baking powder
- 2 eggs
- 100g margarine (butter spread)
Mango & White chocolate mousse:
- 100g white chocolate
- 250ml whipping cream
Mango mirror glaze:
- 2 mangoes
- 300ml mango juice or orange juice
- 4 gelatine leaves
- 2 tsp sugar
1)Blend the mango then freeze. Place one tablespoon in each round mould.
Coconut Cake base:
1)Whisk up the butter with the sugar with the 2 tsp of hot water and whisk till a smooth paste is formed.
2)Add in the rest of the dried ingredients then whisk. Then whisk in one egg at a time.
3)In a preheated oven of 180 degrees, bake for 18 minutes using a baking tray.
White chocolate mousse:
1)Melt the chocolate and leave to cool till room temperature.
2)Whip the cream to soft peaks, then fold it into the cooled white chocolate.
3)Assemble with the Mango centre & Coconut cake then freeze for 3 hours
1)Blend the mangoes and sieve in a jug. Soak gelatine leaves in cold water for 3 minutes.
2)In a hob, boil the orange juice with the sugar and dissolve in the gelatine leaves. Take it off the heat.
3)Pour it into the pureed mango mixture. Then leave to cool in the fridge for around 15 minutes or until cooled.
4)Take out the frozen cake domes and glaze once, return to the freezer for 10 minutes then glaze once more. Refrigerate for an hour and serve.
Give a nice coating of desiccated coconut 🙂 Then leave in the fridge for 1-2 hours and it is ready to serve.
