Simple Japanese Soufflé Pancakes 😱😋

These pancakes are the fluffiest pancakes which can win over any kind of pancake type and all you need is a blender, a pan and two chef rings or you can make the rings by hand using foil or cardboard covered with baking paper✌🏼️

Time: 30 minutes

  • 2 eggs
  • 180ml milk
  • 125g flour
  • 60g caster sugar
  • 1tsp baking powder
  • 1/4 teaspoon baking soda
  • 2tsp vegetable oil
  • 1/2 tsp vanilla
  • Pinch of salt

1) Blend together the milk, 2 eggs, caster sugar, vanilla and salt. Low speed – 60 seconds.

2) Then sieve in the dried ingredients – flour, baking powder, baking soda and blend again till it is all combined for about 30 seconds.

3) Grease the moulds and pan with vegetable oil then let them both heat up for 1 minute on medium low heat.

4) Pour in the batter, half way and cook for 4 minutes on each side. When it is ready run around the pancake with a knife. Done 😊

I drizzled mine with maple syrup and served with some in-season diced apricots and freshly whipped cream.
