Triple Strawberry Eclairs πŸ“

Thought’d I try making Eclairs differently this time by changing the colour of the Eclair dough to match the colour of strawberries πŸ˜„

Eclair recipe:

  • 65ml water
  • 65ml whole milk
  • 55g unsalted butter
  • 1 tsp caster sugar
  • pinch of fine sea salt
  • 100g plain flour
  • 2 large eggs whisked
  • 1 tsp Strawberry essence
  • 1 drop of Red food colouring

Strawberry Cream filling:

  • 250ml Double cream or Whipping cream
  • Strawberry puree (Make fresh by blending strawberries and cooking it with 2 tsp of sugar and lemon juice. Then sieve through a fine sieve and cool)
  • 4 tsp caster sugar

Strawberry glaze:

  • 150g Icing sugar
  • 1 tsp hot water or more to make it a thick liquid consistency
  • 1 tsp Strawberry essence
  • 2 drops of Red food colouring

Eclair Method:

1) Preheat oven to 180 degrees.

2) Cook the butter with water, sugar, salt and milk on medium heat until butter is melted.

3) Take the hob off the heat and stir in the flour. Then back on the heat till it forms a dough ball. Add the strawberry essence and 1 drop of red food colouring.

4) Pipe then bake for 22-23 minutes

Strawberry cream Method:Β 

1) Meanwhile, whip the cream to soft peaks making sure not to over whip.

2) Then whisk in the cooled strawberry puree.

Strawberry glaze Method:

1) In a wide bowl, pour in the icingΒ sugar, colouring, essence and hot water and stir with a spoon till it reaches a thick liquid consistency.

Assembly:Β 

1) Β Start by using a round pipping tip to poke three holes on the bottom of the eclairs.

2) Using the same tip, pipe in the strawberry cream through the holes.

3) Glaze by gliding the top of the eclairs in one motion.

It will taste better after being in the refrigerator for an hour but you can also eat them straight away πŸ˜€
