One Pot Chicken Soup Rice 🍲

A very simple healthy homemade meal. Good for anytime of the day.


  • Cooked rice
  • Half a Chicken
  • 650ml water
  • 4 Garlic cloves
  • Chopped scallions
  • 1 slice of Ginger
  • 3 dried Red Dates
  • Salt & Pepper to season


  1. In a pot, add in the chicken and water, then ginger, garlic and dates. Bring it to a boil over a medium heat for 20 minutes covered. Then reduce the heat to low and cover for another 30 minutes.
  2. Skim off any foam formed at the top and add in the cooked rice, salt, pepper and scallions to serve.
